Ayurvedic Breakfast Cookies: Vata-Grounding & Fiber-Rich

Ingredients

Dry Ingredients

  • 1 cup muesli

  • ½ cup almond flour

  • ¾ cup shredded coconut

  • 2 tbsp Organic India Psyllium Powder

  • ½ tsp cinnamon

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp sea salt

  • 6 dates, chopped

Wet Ingredients

  • 2 flax eggs (2 tbsp ground flax + 6 tbsp steeped Tulsi Turmeric Chai)

  • ¼ cup melted coconut oil

  • ½ cup maple syrup

  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Brew a strong cup of Tulsi Turmeric Chai and use 6 tbsp of it to make your flax “eggs.” Let sit for 5 minutes.

  3. In a large bowl, mix all dry ingredients together, including the Organic Psyllium Powder.

  4. Add in the flax “egg,” melted coconut oil, maple syrup, and vanilla. Stir to combine.

  5. Scoop dough into 2 tbsp-sized balls and place onto a parchment-lined baking sheet.

  6. Bake for 15 minutes, or until edges are golden and centers are set.

  7. Let cool slightly... and enjoy warm with a cozy cup of tea!
